Coconut Curry Cod

When Matt and I went to the roof this is one of the dishes they had. It was by far our favorite. So I got online and tried to find a recipe. I made this tonight for dinner and it was unbelievable!

Cod(I bought the 4oz. fillets at Costco)
1 can of coconut milk
2 teas. curry
juice of one lemon
1 teas salt
some garlic salt
I used about 1/3 cup of splenda
3 Tbsp. sweetened coconut


I just put all the ingredients in a frying pan and stired them together then added the defrosted cod. You can add 3-5 4 oz. fillets. I just used a spoon and kept spooning the sauce over the cod. I ended up cooking it for about 20 min. on med high heat. Then we had the cod over brown rice with asparagus. When we ate it we still squeezed lemon over the Cod. I felt like it was fine dining at our house. (Matt even did the dishes afterward)

Sugar Substitutes

If you are trying to cut back on sugar, these are the best tasting, natural sugar substitutes Ive found. I got them at Whole Foods.

High Quality Stevia (liquid drops)

It must be high quality or it will have a weird aftertaste. Its in the supplement section, its not legal for it to be sold as a sweetener yet, so its sold as a dietary supplement.

Erythritol

**Expensive**

I use a combination of both. Its helping to kick my sugar habit.

Homemade Granola

I tried making granola yesterday. It turned out so good and was so easy! My kids have actually been eating it!!! I liked it because it is all natural and you can add or omit what ever you like. I added extra dried fruit.
Homemade Granola

4 cups rolled oats
2 cups six grain cereal (can use 6 cups of oats instead of cereal)
½ cup wheat germ
½ cup ribbon coconut
1 cup nuts - whole or chopped (walnuts, cashews, almonds, pecans)
½ cup sunflower seeds
1 cup raisins or other dried fruit (dates, craisins etc.)
¾ cup honey
¾ cup vegetable oil
2 tablespoons vanilla
½ cup honey

Mix grains, nuts, seeds and coconut together. Pour oil and honey over mixture and stir well. Spread on well greased cookie sheet and bake at 300 degrees for 30 minutes, stir every 10 minutes. Take out of oven and mix in the fruit, vanilla and ½ cup honey. Put back in oven and bake for another 10 minutes. Stir well and allow to cool. Serve with milk or eat alone as a snack. Store in a tightly sealed container. Refrigerate if kept long. For variety add 1 teaspoon cinnamon and 1 teaspoon nutmeg. This granola is nutritionally high in protein and the B vitamins.

Creamy rice pudding

Once I've made the rice I set that aside.

In a pan add 1 cup of half and half
1/2 cup sugar
1 egg
1/2 cup raisins
1 1/2 teas. ground cinnamon

Stir all that together then add the rice. Stir intil boiling then let it boil for 2 min. Take off and serve.

I used brown rice and it was really good! I didn't even notice a difference.

Sloppy Joes

This is the best recipe! You can make it with kidney beans if you don't want to add meat. I use 3/4 lb. of lean ground beef.

1/2 Onion
1/2 bell pepper
3/4-1lb. lean ground beef
Can chicken gumbo
can of tomato sauce
can of tomato paste
1Tbsp chili powder
1Tbsp worstechershire(sp?) sauce
1 Tbsp vinegar
3-4 Tbsp brown sugar
Ketchup

In pan cook veggies, then brown meat. Add everything and let simmer for 15-30 min.
We just toast bread and eat them like open faced sandwiches. These are so good and low in calories. This is probably Matt's favorite meal that I make. Thanks Nina for the recipe.

Fried Rice

K, my mom gave me a big bag of brown rice. So I thought I'd make a bunch and just eat it. So it's 2 to 1. So I added my 4 cups of water and 8 cups of rice and realized that I needed 16 cups of water for that much rice. Oops! So we'll be coming up with all rice ideas.

Dice onion in butter or olive oil
Scramble a bunch of eggs
add rice ( already cooked)
add water chest nuts, bean sprouts, sugar snap or snow peas, diced ham, and whatever veggies you have.
Add soy sauce to taste if a big pan about 1/2 cup, then salt and pepper.

This was so good tonight. I think this will be what we'll eat every night for a month till we're sick of it.

Year Supply

I've really been feeling like we need to get our year supply amped up. So I've been trying to eat what we'd store. It's been really great. Right now Smith's has their case lot sale. I stocked up on Honey. Anytime there are good prices I'll try to post it. I usually find out once things are all sold out, but I'll try.

Peanut butter banana sandwiches

When I started making bread we ate these everyday!
I toast the bread and put a thin layer of PB on the bread and tons of banana slices.

Matt thinks I do it wrong. He would just rather have two pieces of toast.

Adams Weight Loss

So, as of today, Adams lost over 20 lbs. and hes lost that in about a month. He lost most of it the first two weeks after we started eating like this:

Whole grains only - no white flour
Almost no sweets
Very little meat, maybe once a week
Very little milk
Beans, Brown rice (no white rice)
Veggies

Basic Sweetroll Dough

1 & 1/2 cups scalded milk
1 cup warm water
3 eggs
1/2 cup sugar
2 tsp salt
1/2 cup butter
3 Tbl yeast
7 cups flour
2 Tbl gluten if your using spelt flour
2 Tbl Dough Enhancer

Combine milk, water, eggs, sugar, salt, butter, yeast, dough enhancer, gluten and 3 cups of flour. Mix on high speed for 5 minutes. Gradually add 3 more cups of the flour. Dough should be slightly sticky. Add more flour if needed while kneading.

Soup Ideas

The Amy's brand has a lot of really good tasting organic soups. I tried butternut squash yesterday and it was pretty good.

Vegetables and Ranch Dressing

I use the dry ranch packet and mix it with sour cream. Thats the best tasting way to do ranch I think, better than the store bought ones in jars.

Spaghetti Squash

This is really easy!!
Poke 4-6 holes and put in microwave for 15 min.
After you get rid of the seeds and scrape the squash out you can just add butter and salt and that's really good. But if you want something a little more special...

From there put the scrape squash into a frying pan and add lemon juice and zest from one lemon, minced garlic, then salt and pepper, pesto sauce and mozzerella cheese.
As soon as the cheese melts take it off and serve. This is really good. (I buy premade pesto sauce).

Sweet Potatoes

These are good to make and have with meals I'll boil a bunch of Sweet Potatoes.
I mix them with a little butter, milk and salt. YUM!! I use a hand mixer and mix them until they are smooth. They are really good with ham.

Quick Potatoes

These are super yummy. This is also another idea of Jaci's. I made these the other night and the kids loved them. I did too.

Dice up potatoes in 1/2 inch squares (I used fingerling potatoes which were really good) (**expensive and special) (this is Jaci- I always use red potatoes)
Add McCormick Potato Steamer Package (Its by all the dry sauce packets in the store)

Breakfast Ideas

Pancakes
We have pancakes a lot, Kohlers has a lot of locally owned brands of pancake mixes (Kodiak Cakes, Lehi Roller Mills, and Dr. Grandmas).

These are really fast and so good.

Toppings;
Frozen Blueberries/Raspberries mixed with a little splenda.
We just heat them up in the microwave and break up the raspberries so that it makes a syrup.
(Matt would prefer syrup. He always asks if we have any when I do this. Sorry Matt that's not a "real food")

French Toast
I just use the bread I make and dip it into an egg mixture of eggs, vanilla and cinnamon.
Last night we put honey butter on it. (Matt said it was dry.. Surprise surprise)

Smoothies
We start with 1-2 bananas, yogurt, whatever fresh or frozen fruit water and splenda.
Lately I've been adding a little coconut and then with a little pineapple this gets really good.

Quick Pizzas

RAO's pasta sauce (reduce by half over the stove)
Organic Shredded Mozzerella Cheese
Pre-made whole wheat pizza or whole wheat english muffins

Toast the muffins, then add the sauce and sprinkle on cheese. You can microwave for a minute or two or bake in the oven at 450.

Imitation Cafe Rio salad (veg.)

I warm up some Refried Beans and mix them with salsa
Add Green Leaf Lettuce
Top with :
Tomatoes
Cheese
Sugar snap peas
Cucumbers
Bell Peppers
Some in season fruit
Cafe rio's creamy ranch, or Bajio's vinegarette

I love this, I have it every time I have special salad dressing

Vegetarian Chili

This one is Jaci's idea, but I love it and eat it all the time.

1 Can of Vegetarian Chili
1/3 cup of salsa
spoonful of sour cream
handful of organic shredded mexican cheese mix
a couple handfuls of organic corn chips smashed up

I mix that all up with the chips in the chili. Its yummy.

Tuna Sandwiches

I thnk Tunas not in the same class as meat, so Im cool with eating it like 2 times a week. Its super healthy. Everyone knows how to make tuna fish, but heres how I do it:

Wild Tuna (expensive and special)
Mayo
Organic Dijon Mustard
Relish
Red Onion diced
Organic Chedder Cheese
Whole Wheat Bread

Quick Pasta

I found a REALLY good tasting pasta sauce at Whole Foods. Its called RAO's.

So,

RAO's pasta sauce
whole grain pasta
organic pre-shredded mozzerella

Thats a 2-second meal. The pasta sauce is about $8/jar, so the whole meal is like $12.

Asparagus with Dad's lemon sauce

Grill asparagus with evoo in a frying pan, after about 5 min add a liitle water.

Dip
1/2 c.Light or reg. Mayonaise
Juice of one lemon
1 Tbsp. Lemon Pepper

This is our favorite right now and eat it 3-4 times a week

Jaci's Whole Wheat Bread

Asher got a whole loaf of bread fresh from the oven and didn't want to give it up.



Sponge:
1 Cup Water
2 Tbsp. Yeast (regular, not instant)
1 1/3 Cup Whole Wheat Flour
Stir, let sit for 30 min.
Add:
2 Cups Water
3 Cups Whole Wheat flour
¼ Cup Oil
¼ Cup Raisin Juice Concentrate
¼ Cup Honey
2 Tbsp. Salt
½ to 2/3 Gluten
Add 2 Cups Whole wheat flour and stir.
Knead while slowly adding one more cup of flour. (It’s ok if you need more than one cup)

Divide into three loaves,
Grease pans,
Let rise in oven (helps if oven is warm) until doubles in size.
Then just turn on the oven to 350 cook for 35 min.
